The farm of Øvrejorde is called Kalvefløto and is located at 1200 meters above sea level. Øvrejorde delivers goat's milk to Rueslåtten Ysteri almost all year round for the production of Red Goat, Kubbeost and St. Pål.
St. Pål is a large, firm and unpasteurized storage cheese, made with equal parts cow's and goat's milk. The goat's milk from Øvrejordet makes St. Pål stronger in taste. St. Pål is aged for a minimum of six months. Try with a little grated St. Pål on the omelet!
Red Goat is a semi-firm red putty cheese made from pure goat's milk. The red putty in which the cheese is wrapped is washed with salt water, which gives a good and slightly salty putty taste. Red Goat has won bronze in the World Cheese Championships twice, in 2017 and 2018! Try the wonderful combination of Red Goat together with some good honey!
Goat's milk cube cheese is a matured cream cheese, matured with milk mushrooms. Perhaps better known as chevre. This cheese received a bronze medal in the World Cheese Championships in 2018. Heated slices of block cheese, served with blackcurrant syrup and nuts are definitely worth trying!
